Super Zucchini Cakes

I needed a quick but tasty meal for a bunch of people who happened to be at my house one sunny Saturday morning. The other requirement was that it not require a trip to the store.

Jen and I improvised: a zucchini from the garden, grated up into regular old Krustez pancake mix, with a dash of cinnamon and nutmeg for extra flavor. The boys were skeptical, but in the end, they voted it unanimously forks-up.

I was impressed with how nice and golden and moist the cakes cooked up. They were texturally much better than regular pancakes... which really makes no sense at all, but there you go!


Since we'd never tried these before, I set out just about everything as toppings. Butter, syrup, leftover berry compote, apple sauce, sour cream, plum jam... everyone ended up with their favorites, but none of it was bad!
