corn cakes!

I've been seriously craving cheese lately. Thinking about cooking anything else has been a challenge... but tonight, inspiration struck.

Last week in Portland we visited Vita Cafe for brunch. I had their "Thai Corn Cakes" made with banana and cilantro and some divine whipped coconut syrup. It was amazing - dreamy even - and I resolved to try to make something like it some time. That time turned out to be tonight.

So when I arrived home from work, I got out the corn meal and... had no idea what to do with it. Thankfully the fat-free vegan blog came to my rescue, as happens so often.

Susan's recipe turned out to be just what I needed. I adjusted it a bit - using half a can of coconut milk instead of soy and a (small) banana instead of egg replacer. I also added chopped scallions to the mix for some added flavor, since I also left out the red pepper. Finally, I mixed two tasty things - the remaining coconut milk and some maple syrup - into something worlds better than either.

I can't wait to try this for breakfast with peaches or strawberries. Oh lordy.
